Our selection comes in several formats. The 30 and 50 g caviar sets are made for small-format tins, ideal for a tasting for two or in a small gathering. The glass vessel is filled with crushed ice before receiving the tin. A metallised dome-shaped lid, adorned with a sturgeon (a nod to the fish that is the emblem of caviar), lends a refined touch. The 125 g and larger caviar set is made for our larger formats, for more generous receptions or for grand dinners.

Why serve caviar on crushed ice?
Caviar is best enjoyed at a temperature of between -2 and 2°C. Once out of the refrigerator, the tin gradually warms, which can alter the aromas and the texture of the pearls. The bed of crushed ice holds the tin at the perfect temperature throughout the tasting, without the caviar itself coming into direct contact with the ice. It is the serving technique codified by Russian fine dining.
How much crushed ice should you allow?
The crushed ice should cover the base of the glass vessel sufficiently to surround the tin of caviar on its sides. Crushed ice is prepared by crushing ice cubes by hand with a pestle, or simply by buying ready-crushed ice.
Can the caviar set hold other products?
The caviar set is designed specifically for tins of caviar, with temperature and presentation in mind. It can, however, be repurposed to present other cold products that call for a precise cold chain: salmon roe, certain canapés served in glasses, sashimi or tartares. For these other uses, simply check that the size of the vessel suits your product.
How should you care for the caviar set?
The glass vessel should be washed by hand in warm soapy water. Avoid the dishwasher, whose high temperatures can weaken the glass. The metallised dome-shaped lid calls for particular care: dry it immediately after washing to preserve its shine and avoid limescale marks. For storage, keep the pieces in a dry place, away from knocks.
