Founded in Switzerland in 1978, Balik was born of a rare conviction: to create the finest smoked salmon in the world. From the very beginning, only one fish was worthy of that ambition, the Salmo Salar, the noblest species of all, raised in the pure waters of the Norwegian fjords. Yet it is the art of smoking that gives Balik salmon its signature. Craftsmanship
On arriving at the workshop, every Salmo Salar is entrusted to the expert hands of our artisans for four to five days of meticulous curing. Every gesture is carried out with the utmost care, in keeping with respect for the fish and for traditional craftsmanship. Then comes the smoking, the most delicate and decisive stage of the process. In high-precision ovens, a gentle, continuous smoke slowly envelops each side, penetrating the flesh without ever overpowering it. It is this mastery of time and this precision of gesture that give Balik salmon its incomparable melting quality: a silky texture, a subtle flavour and a tasting experience found nowhere else.
