PERFECT EGG, BUTTERED SOLDIERS & KALUGA CAVIAR

Description

With its generous pearls and incomparable length on the palate, Kaluga caviar pairs wonderfully with a perfect egg. This is where the runny yolk, the tender white and the buttered toast meet the soft, deep intensity that is the signature of the Kaluga.

Ingredients:

  • 2 very fresh eggs
  • 2 thick slices of sandwich bread
  • 30 g good-quality unsalted butter
  • A few sprigs of fresh dill
  • 50 g Kaluga caviar

Method

  1. Lower the eggs into a pan of boiling water and cook for 6 minutes for a set white and a still-runny yolk.
  2. Cut the bread into long soldiers and fry them in butter until nicely golden.
  3. Butter the soldiers generously as soon as they come off the heat.
  4. Set a piece of toast on the board or on the plate.
  5. Gently crack the egg on top and open it to let the yolk escape slightly.
  6. Spoon the Kaluga caviar generously around and over the egg with a mother-of-pearl spoon.
  7. Add a sprig of dill and serve with the warm soldiers.
