The story of Chinese caviar is a recent one on the scale of the caviar world. The crossing of Acipenser Schrenckii and Huso Dauricus, together with the choice of Lake Qiandao as the rearing site, allowed the emergence of a contemporary signature with an assertive character. The lake, set in the heart of the Huangshan mountains, offers crystalline waters especially suited to the development of the sturgeon. It is this combination of prestigious lines, preserved terroir and rearing expertise that gives Qiandao its singular identity.
On the palate, Qiandao evokes the serenity of its native landscape. The firmer membrane, which is bitten gently, is a recognisable feature: it then releases a creamy texture, over which the briny and buttery notes unfold.
