Prunier Caviar Baeri Paris 30 g

Prunier Baeri Paris caviar embodies the finesse of French caviar. Sourced from the Acipenser Baerii sturgeon raised in Aquitaine, it favours an approach built entirely on delicacy, where the aromatic signature is more subtle yet recognisable.

Its light salting preserves the freshness of the pearl and lets the caviar's natural aromas speak for themselves. The large amber and bronze pearls catch the eye with their generous size and characteristic golden sheen. On tasting, the creamy texture releases a fresh, delicate flavour that opens gradually on the palate.

Every Baeri Prunier caviar carries the Protected Geographical Indication (PGI) Caviar d'Aquitaine, a European label that certifies the product's origin and traceability. For Baeri Paris, this designation attests to farming the Acipenser Baerii sturgeon strictly in Aquitaine, in keeping with a precise set of specifications defined by the Prunier Manufacture.

For enthusiasts seeking a refined expression of French caviar, Baeri Paris is one of the most essential references.

Caviar House Finest Caviar Beluga
Caviar House Finest Caviar Beluga

Finest Caviar Beluga is one of the most iconic caviars in our range. A true benchmark far beyond gastronomy; it even appears in the James Bond films. It is harvested from the Huso Huso sturgeon, one of the largest and most ancient fish in the world. This fish can reach up to five metres in length and weigh up to a tonne. Its remarkably generous pearls take on a pale grey, almost pearly hue. Its very creamy texture then reveals delicate buttery notes and a touch of hazelnut on the finish. Between power and delicacy, this aromatic density marks the unique character of Beluga. Tasting the caviar on its own, with a mother-of-pearl spoon or "a la royale" on the palm of the hand, remains the finest way to appreciate its full aromatic richness. To extend the experience, champagne reveals the most subtle notes of Beluga, like a flavour enhancer; served ice-cold, Beluga vodka also makes a historic pairing.

Prunier Oscietra Classique
Prunier Oscietra Classique

The Prunier Oscietra Classique perpetuates a century-old artisanal craft, unique in France. The pearls, of medium size, have a particularly creamy texture. Its aromatic signature unfolds gradually. You first recognise its delicately briny attack, then its characteristic hazelnut notes and finally its long, lingering finish. This progression is one of the signatures of the Prunier Oscietra. A global benchmark in responsible farming since the 1990s, the Prunier Manufacture offers here a caviar that combines century-old tradition (the house produced the first French caviar in 1921) and contemporary exactingness. For lovers of French caviar, the Prunier Oscietra Classique is one of the essential benchmarks, in an accessible expression representative of the great Prunier tradition.

Caviar House Finest Caviar Oscietra Imperial
Caviar House Finest Caviar Oscietra Imperial

Finest Caviar Oscietra Imperial is the first creation of our House. It perfectly illustrates Caviar House's commitment to selecting the finest caviars over decades. This caviar is harvested from Acipenser Gueldenstaedtii sturgeon that have reached full maturity. The additional time spent in farming allows the roe to attain its most accomplished expression: brighter pearls, a firmer texture, a more complex aromatic palette. The hazelnut notes, characteristic of the species, gain in depth and persistence. On tasting, the Imperial offers a rare balance between power and delicacy. The briny hit gives way to an enveloping roundness, releasing hazelnut notes on the finish. The length on the palate, the signature of great Oscietras, extends the experience far beyond the pearl. Like every caviar in our range since 1950, the Imperial is the fruit of a long-term partnership with farms chosen for their exacting standards and their respect for the sturgeon.

Mother-of-pearl spoons
Mother-of-pearl spoons

The individual mother-of-pearl spoon carries forward the logic of the set of 6, in a more accessible format. Each spoon is handmade, which gives them slight variations in colour (from pearly white to a soft pink) and in shape. These variations bear witness to the handcrafted nature of the product and the uniqueness of each spoon. The mother-of-pearl spoon is the benchmark instrument for tasting caviar. Its neutrality on the palate preserves all the finesse of the pearls, unlike metal, which can alter the flavours. This tradition dates back to the Russian tsarist courts, where mother-of-pearl was always favoured for serving. The single format opens up several uses: completing an existing set, accompanying an occasional caviar gift, or building up your collection over time. For a tasting among several people, the set of 6 remains the dedicated option.

Small blinis (16 pieces)
Small blinis (16 pieces)

The Caviar House Small Blinis carry forward the tradition of fine Russian gastronomy. The blini, a small leavened pancake made from flour and yeast, has accompanied caviar and salmon roe in the codes of Russian-style service since the nineteenth century. Its soft, lightly airy texture serves as a neutral setting that brings out the aromas of the main product. Our 16-piece format (small blinis) is designed for the aperitif and the drinks reception: each mini-pancake, already portioned, holds a touch of caviar, a spoon of crème fraîche and a classic topping (chives, dill, finely chopped red onion). The individual format lets you multiply refined bites and pass round elegant canapes, in the tradition codified by the great Russian and French tables.
