Caviar House Qiandao

Caviar House Qiandao is the fruit of a unique cross between two sturgeon native to the Amur River. The result is a caviar with an assertive character, set apart from Oscietra and Beluga by a signature all its own. The farming takes place in the crystalline waters of Lake Qiandao, "the lake of a thousand islands" at the heart of the Chinese Huangshan mountains. This geographical signature, where nature and water play a decisive role, gives Qiandao its distinctive aromatic palette. Caviar House was among the very first selectors to choose and champion Chinese caviar for its quality, from the emergence of this sector in the 1990s. The pearls, of generous size, range from amber to charcoal. On tasting, their firmer membrane is gently bitten before releasing a characteristic creamy texture. On the palate, the highly distinctive taste combines pronounced briny notes and a buttery signature, in a roundness that extends the experience. Qiandao is an invitation to discover an alternative signature to Russian or French caviar. This caviar of character is ideal for varying the pleasures of discerning enthusiasts.

Finest Caviar Oscietra Imperial is the first creation of our House. It perfectly illustrates Caviar House's commitment to selecting the finest caviars over decades. This caviar is harvested from Acipenser Gueldenstaedtii sturgeon that have reached full maturity. The additional time spent in farming allows the roe to attain its most accomplished expression: brighter pearls, a firmer texture, a more complex aromatic palette. The hazelnut notes, characteristic of the species, gain in depth and persistence. On tasting, the Imperial offers a rare balance between power and delicacy. The briny hit gives way to an enveloping roundness, releasing hazelnut notes on the finish. The length on the palate, the signature of great Oscietras, extends the experience far beyond the pearl. Like every caviar in our range since 1950, the Imperial is the fruit of a long-term partnership with farms chosen for their exacting standards and their respect for the sturgeon.

The Caviar House Small Blinis carry forward the tradition of fine Russian gastronomy. The blini, a small leavened pancake made from flour and yeast, has accompanied caviar and salmon roe in the codes of Russian-style service since the nineteenth century. Its soft, lightly airy texture serves as a neutral setting that brings out the aromas of the main product. Our 16-piece format (small blinis) is designed for the aperitif and the drinks reception: each mini-pancake, already portioned, holds a touch of caviar, a spoon of crème fraîche and a classic topping (chives, dill, finely chopped red onion).
