Almas is a caviar that fascinates through its history and its rarity. Its name means "diamond" in old Persian, in reference to the dazzling white colour of its pearls. For a long time, this caviar came exclusively from albino sturgeon caught in the wild in the Caspian Sea, on extremely rare occasions.
Caviar House was one of the first houses in the world to offer a farmed Almas, as part of a commitment to preserving the species. Today, the pearls retain their characteristic white hue, the fruit of confidential farms.
