Why is Kaluga called the "Beluga of the rivers"?
The Huso Dauricus, the source of Kaluga, is a direct cousin of the Huso Huso (the Beluga). Its impressive stature (nearly 5 metres and 1 tonne), its longevity and the slow maturation of its roe earn it this nickname. Unlike Beluga, the Huso Dauricus is native to the waters of the Amur River, on China's northern border, which gives it its distinct terroir. Its large amber pearls and unctuous texture make it a rare and especially sought-after alternative.
Why is Kaluga so rare?
Several reasons account for its rarity. First, the species itself: the Huso Dauricus requires long years of rearing before yielding its first roe. To this is added a strictly limited production, owing to the small number of farms able to raise it with due respect for the product. Lastly, the selection is more demanding, with stricter criteria of amber colour, pearl size and firmness. This is what makes it one of our most sought-after caviars.
Which pairing should you favour with a Kaluga?
Champagne remains the natural pairing, prolonging the buttery roundness of Kaluga without masking its hazelnut notes. A blanc de blancs or a brut nature accompanies its aromatic generosity particularly well. Ice-cold vodka works very well too, in a more traditional spirit. As for wine, a Chablis Premier Cru or a Sancerre will bring their minerality in echo of the marine notes of the pearls.
Is Kaluga meant for an audience of connoisseurs?
Not necessarily. Its round, buttery profile, marked by hazelnut notes, is generally very approachable, even for a first tasting of a characterful caviar. That said, its rarity often places it within more notable occasions, a birthday or a celebration for example. Knowledgeable enthusiasts will enjoy it as an alternative to Beluga, in a reading that is at once more characterful and more accessible geographically.
