Kaluga tells a precise geographical story. Native to the Amur River, on China's northern border, the Huso Dauricus long thrived in waters especially suited to its growth. With the rise of responsible farming at the close of the twentieth century, Kaluga was able to take a lasting place in the landscape of great caviars, easing the pressure on wild species. Caviar House supported this transition by selecting the farms able to deliver a consistently high-end expression.
On the palate, Kaluga is distinguished by its roundness. The pearls, firm at first, release a creamy, unctuous texture, with a buttery persistence and the hazelnut notes that are its signature. Tin after tin, it is this consistency that our selection criteria seek to preserve, in continuous dialogue with our partner producers. Kaluga thus holds a singular place, between absolute rarity and aromatic accessibility.
