Finding the Prestige caviar that is right for you

Our Prestige range brings together four rare signatures. First, the Caviar House Finest Caviar Beluga, from the Huso Huso sturgeon raised for at least 18 years, wins you over with its large pearly pearls and its buttery length on the palate. Alongside it, the Almas stands as the rarest of all caviars produced today: its pearls of a sparkling white, close to true pearls, deliver a flavour of incomparable delicacy. The Baeri Paris Prunier, lightly salted, reveals generous pearls with bronze glints and a creamy texture, for a tasting of great finesse. Lastly, the Oscietra Heritage Prunier accounts for only 1% of the Manufacture's production: its golden-brown hues and complex aromas make it the haute couture of French caviar.

Why is the Beluga regarded as the benchmark caviar?
The Beluga comes from the Huso Huso sturgeon, one of the largest and most ancient fish in the world, able to reach 5 metres and 1 tonne. Its rarity rests on several factors: a minimum of 18 years of farming, pearls among the largest that exist (up to 4 mm), a characteristic pale grey, almost pearly colour, and a long aromatic persistence. Today it is the legendary benchmark in the world of caviar.
What sets the Almas apart from the other Prestige caviars?
The Almas is today the rarest caviar in the world. Its name means diamond in old Persian, in reference to the dazzling white colour of its pearls. Originally from wild albino sturgeon fished in the Caspian Sea, it now comes from small, confidential farms. Caviar House was one of the first Houses to offer this white signature: it is a connoisseur's caviar, with an incredibly light and delicate flavour.
For what occasion should you give or enjoy a Prestige caviar?
A Prestige caviar lends itself to the finest occasions, such as a birthday or the festive season. This selection is also ideal as a gift for any caviar lover. Our team can help you compose a gift set including a champagne cuvée or mother-of-pearl spoons, to perfect the moment of tasting. How can you fully appreciate a Prestige caviar during the tasting?
A few minutes before serving, we advise taking the tin out of the refrigerator. The spoon should be of mother-of-pearl, horn or any other natural material, as metal tends to alter the aromas. For a tasting "a la royal", place a small amount of caviar in the hollow of your hand, between the thumb and forefinger, the contact with the skin allowing you to enjoy the caviar at its ideal temperature. As for accompaniments, the simplest pairings are often the finest: a warm blini, a touch of crème fraîche, and a champagne to prolong the tasting.

When caviar becomes a work of time

Prestige caviars embody the meeting of an exceptional species, a terroir and a precise craft. The Beluga, for example, requires at least 18 years before yielding its first pearls. The Oscietra Heritage Prunier, for its part, accounts for only 1% of the production of the Prunier Manufacture in Aquitaine, raised along the banks of the Isle, a tributary of the Dordogne.
