Why is Beluga caviar so sought after?
The Huso Huso sturgeon is a spectacular creature. It is among the largest and most ancient of freshwater fish, able to reach 5 metres in length and 1 tonne in weight. What is more, it calls for 18 years of rearing before it will yield its precious roe. To this is added the size of the pearls, which can reach 4 mm, together with a creamy texture that lingers on the palate, underlined by its characteristic buttery notes.
How much Beluga should you allow for a tasting?
A serving of around 30 g per person is generally enough for a tasting. For an aperitif or an amuse-bouche, allow nearer 15 to 20 g per guest. Beluga is best savoured in small quantities, ideally from a spoon or "a la royale", so that the pearls melt slowly on the palate and release their full aromatic range.
What should you serve with Beluga caviar?
Beluga needs little beside it. A spoon of mother-of-pearl or horn, a warm blini, a touch of crème fraîche: simplicity remains the finest setting for its buttery notes. As for pairings, champagne is the natural ally, its freshness drawing out the most subtle notes of the caviar. Ice-cold vodka is the historic match, in its minimalist purity. A dry, mineral white such as a Chablis Premier Cru can also echo its balance.

Its rarity and aromatic signature make it ideal for memorable moments: a birthday, a grand celebration, a long-awaited reunion.
